Meet Don Papa: A World-Class Rum from the Philippines

Don Papa Rum

If you haven’t yet discovered one of the Philippines’ most celebrated premium rums, you’re in for a treat. This month, Refined Society turns the spotlight on Don Papa, our Bottle of the Month.

Meet Don Papa, a rum that offers more than just a sophisticated experience on the palate. Behind its rich flavours and beautifully crafted bottle lies a fascinating story of heritage, craftsmanship, and the enchanting island it calls home.

The Birth of Don Papa

Founded in 2012 by former Rémy Cointreau executive Stephen Carroll and entrepreneur Andrew John Garcia, Don Papa draws its identity from Negros Island in the Philippines, affectionately known as Sugarlandia for its sprawling sugarcane plantations and fertile volcanic landscape.

Its name pays homage to Dionisio Magbuelas, better known as Papa Isio, a revolutionary figure whose courage and leadership became part of the island’s history and folklore during the Philippine Revolution.

It’s this beautiful intersection of history, craftsmanship, and a sense of adventure that gives Don Papa its distinctive identity.

What began as an ambition to create a premium Philippine rum has since grown into an internationally recognized brand, eventually catching the attention of global spirits giant Diageo, the company behind Johnnie Walker, Tanqueray, and Guinness.

In January 2023, Diageo announced its acquisition of Don Papa for an initial €260 million, with up to an additional €177.5 million in performance-based payments through 2028. The deal was completed in March 2023, marking a significant milestone for the Philippine-born brand.

Already available in more than 30 countries at the time, Don Papa’s acquisition highlighted its growing international appeal and the potential of Philippine rum to compete in the global premium spirits market.

From Sugarcane to the Glass

At the heart of Don Papa is Negros Island’s prized sugarcane.

Crafted from molasses and matured in American oak barrels, including ex-bourbon and ex-Rioja casks, Don Papa develops its character in the warm, humid climate surrounding Mount Kanlaon. These tropical conditions influence the maturation process, giving the rum its inviting amber colour and rich aromatic profile.

The first sip reveals why Don Papa has earned a following among those who appreciate a smoother, more approachable rum.

Notes of vanilla, honey, and candied citrus lead the experience, followed by subtle hints of cinnamon and warm spice. Its signature sweetness lends a distinctly indulgent character, making it particularly inviting for those discovering premium rum.

For those seeking greater depth and complexity, Don Papa also offers expressions such as Rare Cask and Sherry Cask, each exploring a different dimension of the spirit.

The Art of Pairing

Sometimes, simplicity is the most sophisticated way to enjoy a good spirit.

Don Papa can be appreciated neat or over a generous cube of ice, allowing its layered aromas and flavours to unfold gradually.

For a delightful contrast, pair it with dark chocolate, aged cheeses, or roasted nuts. These accompaniments help balance the rum’s sweetness, creating a more rounded tasting experience while allowing its warmth to linger pleasantly on the palate.

For something more tropical, grilled pineapple or a citrus-inspired dessert beautifully complements its fruit-forward character, bringing a little taste of the Philippines to the table.

And if cocktails are more your style, a rum Old Fashioned offers an elegant interpretation of a timeless classic.

Personally, my favourite is the Bacolod Spritz, a refreshing, fizzy highball made with Don Papa Rum, lime juice, and ginger beer, garnished with fresh mint and lime. Named after Bacolod, the capital of Negros Occidental, this cocktail brings a refreshing twist to the rum while celebrating its roots in Sugarlandia.

But beyond its flavours and versatility, what makes Don Papa particularly compelling is its sense of place. From the sugarcane fields of Negros to the fascinating stories that shaped its heritage, every bottle offers an invitation to discover a different side of the Philippines.
